Sanitation Program

The sanitation program is an essential component to your company’s integration into the CFIA’s regulatory audit system.

Datahex Systems offers a written sanitation program that clearly lays out all the criteria your establishment will need to meet to be able to guarantee sanitary food products.

Our sanitation program includes, among others :

• The review or development of sanitation programs for equipment in each (CIP and COP)area
• The review or development of sanitation programs for all facilities, production and storage areas to meet Canadian (ACIA) (CFIA) and American (USDA) SSOP requirements
• A comprehensive list of chemicals and concentrations used, chemicals used according to manufacturer’s instructions and listed on the CFIA’s Reference Listing of Accepted Construction Materials, Packaging Materials and Non-Food Chemical Products.
• Temperature requirements
• Cleaning and sanitation procedures
• Disassembly/assembly instructions
• Proper cleaning and sanitizing methods required during production
• Program effectiveness (microbiological swab sampling, sensory-based inspection of areas and equipment, verification of plant sanitation personnel’s work, etc.)

We also provide necessary controls, so that:

• Production activities start only once all sanitation requirements have been met (e.g.: preoperational inspection)
• When new equipment is purchased or new chemicals are used, a record is maintained and the sanitation program is modified to incorporate new cleaning procedures
• Compliance with general maintenance and special sanitation procedures is monitored during operations (e.g.: cleaning mid shift)
• Foods and packaging materials are not contaminated during or after equipment cleaning and disinfection
